Sparkling Pink Lemonade Pillows

Posh. It’s a word I would use to describe having tea with a duchess. I think it also perfectly defines these cookies.


Look at how soft they are. Mmm-mm!


And they’re covered in glittery sprinkles! I’ve never witnessed someone turn down a sparkling cookie. They also happen to be fool-proof, so if you’re leery of the kitchen, you’ve got nothing to be afraid of!

I’ve made these cookies several times, so I know a few things:

  1. They are impossibly simple to make
  2. You can’t go wrong with lemon
  3. They look amazing both in yellow and sparkling pink

The original recipe was found a few months ago on Pinterest (imagine that, right?). Well, in my search to find the best Valentine’s Day recipes around, I came across a ton of recipes calling for cake mix. If you’re low on time, you can try those, but I’m sharing this recipe because it’s quick and homemade! These fluffy, lemony pillows could be in your hand in about 30 minutes.


  • 1+3/4C Flour
  • 1tsp Baking Powder
  • 1/4tsp Salt
  • 1/4C Butter, softened
  • 1/4C Powdered Sugar
  • 1/4C Sugar
  • 1 Egg
  • 2Tbs Sour Cream
  • 2Tbs Milk
  • 1tsp + splash Lemon Extract (if you’re using Lemon Juice, follow the original recipe and use 2 teaspoons)
  • 1tsp Vanilla
  • More sugar for rolling
  • Sprinkles
  • Red Food Coloring


Combine flour, salt and baking powder in a bowl and then stir it a few times with a whisk. In a larger bowl, add the other ingredients – except for the food coloring, sprinkles and rolling sugar.


Whisk this mixture for a minute to get it as thoroughly combined as possible. Small lumps are normal! Then add the flour mix to the sugar mix and stir well.


And just like that, you’re ready for color! I dabbed a few small blobs of food coloring around the dough and then stirred, adding a little more as I went along. This all depends on what shade of pink you want your cookies to be. Keep adding and stirring until you find a shade you like (:



Now for the glitz! Dump some sugar and some sprinkles into shallow dishes, maybe combining them. The dough is very sticky, so it will pick up the sugar and sprinkles right away! Just roll them around until you’ve got enough glam, then drop them onto a non-stick cookie sheet.



If your cookie sheet isn’t non-stick, I’d recommend spraying it. The sugar will caramelize on the pan and you’ll have a sticky mess. I did 3 rows of 4 on mine, they stay nice and tall and fluffy instead of spreading. You could almost call them cake bites instead of cookies!


These are the perfect way to get into the V-Day spirit and show someone you love them!

Also, these would be excellent for one of the 14-days of love!
