Easy, easy, easy. Perfect for a quick lunch.

As many of you know, my husband, Bobby Potesta, is in the Army. We live close enough to the post that he gets to come home for lunch, which is why we are here with this Pizzadilla. Mmmm-mm.


Bobby isn’t very picky, but nobody likes a sandwich every day. I try to mix it up with burrito bowls, taco pockets, pasta, and he’s always up for leftovers. But I can never go wrong with anything relating to pizza! My guy loves pizza! Let’s be real, pizza is the definition of cheesy deliciousness!

This is oh-so-easy. In a hurry in the morning? Assemble it the night before, then take to work the next day, pop it into the microwave, and wah-lah, you’ve got a hand-held pizza.


  • Tortilla(s)
  • Marinara Sauce
  • Shredded Mozzarella Cheese
  • Shredded Cheddar Cheese
  • Pepperoni

Look, it’s this easy:




Then fold in half and microwave for 45 seconds, or until the cheese is melted. If you’ve got time on the weekend and you’re feeling fancy, drop a small pat of butter in a skillet over medium heat, and place the tortilla on top. Add the cheese first, so it melts as you build the rest of the pizza, fold in half and flip until the tortilla is beginning to get crispy. De-lish!
