These cookie right here? These are unbelievable. So soft and chewy and full of melty chocolate and rich flavor. I just had to go back to this recipe and make them again, which never happens. I’m always rotating recipes, constantly trying new things, mixing new flavors and textures. These cookies, however, are a staple!
The secrets to these cookies are coconut oil, a whisk and chilling. Replacing butter with coconut oil is such a great way to make a cookie healthier, but its also amazing when it comes to flavor. Who can deny chocolate and coconut? Whipping up the wet ingredients is the easiest way to get the fluffiest cookies: the better your cookie dough is mixed, the more evenly your cookies will bake. This is why I whip the wet ingredients together before adding the dry. And lastly, chilling. I’m impatient, so I have a hard time with this. But since I don’t enjoy cleaning my oven, I always chill the dough. Coconut oil has a very low melting point, so the chilling counteracts this and prevents a lake of cookie dough. There are lots of little things you can do to make great cookies! Special equipment not necessary (:
I recommend these fresh out of the oven. They’re even better warm! Bobby likes to pop them into the microwave for 10 seconds to get that melt-in-your-mouth effect. If any cookies make it long enough to cool, try this to make them even better!
